cooking with caroline: cinnamon swirl banana bread


Once again, thanks to Pinterest, I found a recipe that I just had to make. Last week, I pinned this recipe from a blog called Lovin From the Oven. How fun is that name?! Anyway, I saw that it was going to be cold and rainy yesterday, so I decided that while Molly took her morning nap, Caroline and I would bake this yummy banana bread...I also thought it would be a good time to get in Caroline's ear about moving from her crib to her big girl bed. ;)

Per usual, Caroline enjoyed mixing, pouring, stirring, and tasting!

don't know if it's the magic of photoshop editing, or my baking, but Lovin' From the Oven's Banana Bread looks prettier then mine! Regardless though, this is a simple recipe, and oh so good! Think Duncan Hines Cinnamon Swirl Muffins and Banana Bread mixed into one. The Cinnamon/Sugar gives the top of the bread a crunch that was unexpected to me, but I loved it. Then again, I love anything sweet. 
*I used 3 bananas, but I will use 4 next time. The recipe calls for 1.5 cups AP flour. I used half AP, half whole wheat because I like to believe that makes it okay to eat 3 pieces for breakfast. I don't believe it altered the taste one bit.

Molly woke up just in time for a taste test time, unfortunately she was only tasting her Banana Puffs today!
